Grilled Artichokes with Herb Aioli

Ingredients
- 2 tbsps chopped garlic
- 1 tbsp chopped shallot
- 1/4 cup olive oil
- 2 tbsps balsamic vinegar
- 1 tbsp chopped basil or cilantro
- Salt and pepper
- 2 Large artichokes, steamed and cut in half with the choke removed
- 1/3 cup stale bread crumbs
- 1/2 tbsp white wine vinegar
- 7 cloves garlic
- 1/2 tsp salt
- 6 egg yolks
- 1 1/2 cups olive oil
- White pepper
- Hot pepper sauce
- 1/4 cup fresh basil or cilantro
Directions
Prep the Artichokes for Grilling:
1. Combine garlic, shallot, olive oil, balsamic vinegar, basil or cilantro, salt, and pepper together in a large mixing bowl and set aside
2. Trim and steam artichoke hearts, stem-side up, for about 25-35 minutes or until the heart is tender
3. Cut the artichokes in half and place in the mixture to marinate for 15 to 20 minutes

Make the Herb Aioli:
1. While the artichokes marinate, mix the bread crumbs, white wine vinegar, garlic, salt and egg yolks in a food processor. While blending, slowly pour in the olive oil, white pepper and hot sauce to taste. Add fresh basil or cilantro and pulse to combine.
Grill the Artichokes:
1. Preheat the grill
2. Place artichokes on the grill, cut side down
3. Cook for 4 to 6 minutes or until the tips are a little charred
4. Serve immediately with herb aioli and enjoy!
